ST. LOUIS – Chris Koster, Missouri Attorney General, is suing John's Butcher Shoppee, a St. Louis-area butcher, alleging the business is using fillers in its ground beef and sausage without informing customers, according to The Associated Press. Koster claims businesses in Overland and Festus were using beef heart and soy, which is cheaper than ground beef, without listing them on the label.

Although the fillers are not a public health risk, Koster said customers should be told what is in the meat they buy. Some samples were more than half beef heart, the Missouri Department of Agriculture found. The department forbids using beef heart in ground beef because it has higher cholesterol than other meats.
