Breaded meat and poultry manufacturers have a new option for gluten-free crumbs. Los Angeles-based Longeve has developed an ingredient made from 100% toasted pea protein. It may be used as a direct replacement for traditional breadcrumbs for bulking up meatloaf and meatballs to coating beef, chicken, pork or even analogs for baking and frying.

Made with just one nutritious ingredient – toasted peas – they’re crispy, crunchy, full of fiber and flavor. The crumbs also boost the protein content of products.

There’s a traditional format and a panko style. The latter is a lighter, flakier crumb than the traditional format. Panko crumbs are traditionally used to give a super crunchy coating.
