Innovators in meat and poultry processing and foods will converge on Cologne, Germany for Anuga 2015.
More than 850 exhibitors expected to represent the meat segment of Anuga 2015.

COLOGNE, Germany – The countdown begins to the biennial Anuga, the world’s leading food fair for the retail trade and the foodservice and catering markets. Taking place at Koelnmesse in Cologne, Germany, Oct. 10 to 14, Anuga features 10 specialized trade show segments in one location.

The meat segment will include more than 850 exhibitors from 45 countries and will span three exhibit halls. Exhibitors showcase everything from traditional meat and poultry to exotic game, specialty charcuterie and gourmet deli meats.

Meat and poultry in the form of ready meals and convenience foods will also be showcased in other segments, including Chilled & Fresh Foods, Fine Food, Foodservice, Frozen Food and Organic. The other four segments are: Bread, Bakery and Hot Beverages; Dairy; Drinks; and RetailTec. In total, the expo will include more than 6,800 exhibitors from more than 100 countries ready to do business with around 155,000 trade visitors from nearly 200 countries.

Innovations making their debut to the global food industry include Salami Nuggets from Germany’s Windau GmbH & Co. This new concept is designed to appeal to those who don’t necessarily like meat sticks or jerky but are craving savory, satiating high-protein meat snacks. Sold in four-packs of 90-gram cups, the bite-sized salami pieces come in four flavors: Bacon, Classic, Paprika-Chili and Parmesan.

Bacon specialist Zandbergen, The Netherlands, is rolling out Burger Bacon Rounds, which is bacon intended for round burgers and buns. Made from 100 percent pork bellies, which are selected, brined, rolled, dried and beech wood smoked without any additional additives, the rounds are 95 percent meat and come raw or precooked. Precooking its bacon products produces highly flavorful bacon fat. Now the company will be selling it in glass jars as a specialty cooking fat.

For the adventurous carnivore, Austria’s Ager GesmbH now offers what it calls a Trilogy of Game. Sold in packs of four individually vacuum-wrapped and frozen servings, the three game meats available are: deer medallion, wild boar steak and venison escalope.
