Slideshow: Meaty innovations for pandemic meal planning

Many consumers are experiencing cooking fatigue as they enter the ninth month of the global pandemic.

Columbus Craft Meats charcuterie gift

Charcuterie, simplified

Hormel Foods

Hormel Foods Corp. subsidiary, Columbus Craft Meats is offering three new items designed as premium charcuterie gift options. The Charcuterie 101 Collection ($109.99) has sweet and bold pairings that complement its slow aged, artisan salami flavor. A cherry wood charcuterie board and cheese knife complete the starter kit. The Entertaining Collection ($159.99) contains an array of artisan salamis, cheeses, crackers and more. The Felino Gold ($89.99) is the “King of Salami.” Crafted from pork, fresh garlic and sherry wine, this artisan 2.5-lb salami is slow-aged for a minimum of 30 days in a natural casing to develop its traditional, rustic flavor.

Simply Fresh entrées

Just like homemade

FiveStar Gourmet Foods

Simply Fresh, a fresh meal brand from FiveStar Gourmet Foods, Ontario, Calif., is a new line of packaged, grab-and-go entrées designed to be prepared at home in five minutes and taste as if they were prepared in the retail store. The brand specializes in authentic international cuisines with offerings such as caprese chicken with pesto marinara, Baja chicken with rojo sauce, Thai beef with sweet chili sauce and mojo pulled beef with chimichurri sauce.

Duck breast

Start a new tradition with duck

Maple Leaf Farms

Holidays are the perfect time to get into the kitchen and discover some new cooking flavors. For Maple Leaf Farms, Leesburg, Ind., this includes exploring new and old ways to serve duck for holiday meals. To make it easy, the company now offers an online holiday duck package that includes four 8-oz duck breasts and one 3.5-lb of duck fat for cooking the bird. Duck breast is a red meat option that’s as lean as chicken breast, so the duck fat gets added for flavor and richness.

Organic turkey

Getting to know your turkey

Farmer Focus Organic Poultry

Farmer Focus Organic Poultry, Shenandoah Valley, Va., has added turkey to its lineup of humanely raised poultry for Thanksgiving 2020. Unlike commercially bred birds, this breed of heirloom turkey has a long purebred lineage. This means they grow more slowly, as did farm-raised birds of the past. That longer grow time leads to a more tender, juicier and better-tasting bird, according to the company. All Farmer Focus turkeys and chickens have a Farm ID, creating a distinctly farm-to-table experience, by allowing consumers to traceback the farm where the poultry was raised.

Wagyu burger

Restaurant-quality Wagyu

Vermont Wagyu

Vermont Wagyu, Springfield, Vt., is all about 100% Wagyu beef descended from Japanese seed stock. The company is now shipping its restaurant-quality beef direct to households throughout the United States. The farm practices whole animal butchery, making everything from tenderloin, ribeye and strip steaks to short ribs, burger meat, chorizo and marrow bones.

Carnitas and meatballs

Better for you, better for the soil

Belcampo Meat Co.

Belcampo Meat Co., Oakland, Calif., is rolling out fully cooked organic carnitas and meatballs made with grass-fed and finished USDA Certified Organic and Certified Humane beef. The meat is sourced from animals raised using regenerative farming methods on the company’s own 25,000-acre farm.
