ROSEMONT, ILL. – US Foods Holding Corp. announced on June 28 it would be launching a line of steaks featuring its new Tender by Design freezing process. With this new process, the supplier is able to make beef products available year-round, locking in the beef when the climate and feed conditions are the best.

The beef product is aged to optimize texture and overall quality. After the aging process, items are then individually vacuum-packed to allow operators to use only as much as they need at the time. US Foods said its proprietary freezing process locks in tenderness. Operators can thaw product as needed to align with customer traffic, which will result in better inventory control.

The company’s well-known Stock Yards brand will feature Tender by Design. The launch includes 6-, 8- and 10-oz half-faced, center-cut, Choice top sirloin steaks and an 8-oz baseball cut choice top sirloin steak.
