ASHEVILLE, N.C. – How does a land-locked chef win a cooking competition by preparing seafood dishes for a panel of discerning judges? Joshua Moore, executive chef and managing partner of Volare Italian Ristorante in Louisville, Kentucky, figured it out on the fly.

Chef Moore won Food Network’s “Chopped” cooking competition in January. “Chopped” pits four chefs against the clock and one another as they race to prepare an appetizer, entrée and dessert using a basket of mystery ingredients provided by the show. Chef Moore’s challenge was “Deadly Catch,” a basket of exotic seafood.

He was a guest chef at the Certified Angus Beef 2019 Annual Conference recently held in Asheville, North Carolina — and where the ingredients likely were more familiar to him. Watch and listen as Chef Moore recalls his experience on the show and how he came away with more than a victory.
