Pederson's Snack-size Bacon
Pederson’s individually wrapped slices of bacon are making their way into the meat snack category.
 

Pederson’s Natural Farms has created a fully cooked bacon snack product. The snacks are individually wrapped slices of bacon and are making their way into the burgeoning meat snack category.

Hamilton, Texas-based Pederson’s is rolling out 1-oz. packs of fully cooked, uncured, no-sugar-added hickory smoked bacon slices. The pork used is humanely raised on a vegetarian diet without antibiotics. Requiring no refrigeration, the packs come with a peg hole for easy merchandising. Each pack contains two slices, with a one-slice serving containing 30 calories, 2 grams of fat and 2 grams of protein.

The company has historically been a processor of ham, sausage and bacon. But demand for the company’s bacon has surged to more than 85 percent of the business, and now it dominates the product mix. Pederson’s already produces about 100,000 lbs. of raw bacon per week for retail and foodservice customers.
