Consumers looking for a healthy alternative to bacon can look beyond turkey or chicken.

The Sonoran Mushroom Company claims to grow a “bacon mushroom” that has bacon flavor when sautéed in butter or oil.

The Tucson-based farm is owned and operated by the Jacobs family. The Jacobs harvest multiple varieties of oyster mushrooms, including the pink oyster (Pleurotus salmoneo stramineus), which the company calls its “bacon mushroom.”

John Jacobs said bacon mushrooms, and oyster mushrooms have a meaty, smoky flavor similar to that of bacon. The fungi also feature numerous health benefits.
