WASHINGTON — Notice 07-10: Instructions for Sampling Ammoniated Beef Products has been issued by the Food Safety and Inspection Service (F.S.I.S.), the American Meat Institute announced.

New directions to inspection program personnel to implement routine sampling of all ammoniated (pH enhanced) beef products for Escherichia coli (E. coli) O157:H7 in raw beef products in both slaughter and processing (non-slaughter) establishments is provided in this notice.

This notice cancels Ch. II, Section IV. F of F.S.I.S. Directive 10,010.1, Verification Activities for Escherichia coli O157:H7 in raw beef products. In addition, the notice provides information on the process of making ammoniated beef products.
