New directions to inspection program personnel to implement routine sampling of all ammoniated (pH enhanced) beef products for Escherichia coli (E. coli) O157:H7 in raw beef products in both slaughter and processing (non-slaughter) establishments is provided in this notice.
This notice cancels Ch. II, Section IV. F of F.S.I.S. Directive 10,010.1, Verification Activities for Escherichia coli O157:H7 in raw beef products. In addition, the notice provides information on the process of making ammoniated beef products.
