Snap Kitchen brisket tacos

AUSTIN, Texas- The healthy meal-focused foodservice chain, Snap Kitchen, released the new menu for its 43 nationwide locations on June 20. The menu offers six new meals created by a team of chefs and nutritionists made from fresh ingredients including two brisket offerings, three ethnic dishes and a hometown favorite.

Slow Roasted Brisket Tacos take braised brisket cooked for 10 hours and add roasted poblano peppers and zucchini, and wrap it in a Cassava and Coconut tortilla. The tacos can be topped with a chipotle salsa or a dairy-free sour cream made from cashews and lemon juice.

Brisket Hash features fresh cut peppers, onions, red cabbage and sweet potatoes coupled with brisket prepared with a proprietary barbecue rub. A barbecue sauce adds flavor to the item, formulated with caramelized yellow onions, vinegar and honey to reduce sugar content.      

"Our new menu defies the laws of food physics with unexpected meals that are good for you and incredibly delicious at the same time," said Dave Kirchhoff, CEO of Snap Kitchen. "Our chefs and dietitians took brisket, a meat that people obsess over, and turned it on its head with a healthy twist."

"To many people's surprise, brisket, when prepared correctly, is incredibly lean and nutritious, making it an ideal ingredient for a satisfying guilt-free meal," said Ethan Holmes, executive research and development chef at Snap Kitchen. "We really challenged ourselves with this menu to feature unanticipated ingredients and new spins on classics that you can't find elsewhere."

On the ethnic side, the chefs at Snap Kitchen have created Coconut Curry Beef with antibiotic-free, poached beef, light coconut milk, tossed over a bed of whole grain brown rice with ginger garlic, cilantro, Thai basil and chili oil. The Cuban inspired Turkey Picadillo Stuffed Peppers feature ground turkey in a homemade tomato sauce stuffed into bell peppers. An Israeli breakfast Shakshuka combines fresh vegetables and tomato sauce topped with an over easy egg.

The Tex Mex breakfast item, Beef Sweet Potato Scramble is Snap Kitchen’s better-for-you version that contains grass fed ground beef, locally sourced eggs and shredded sweet potatoes and a fresh tomatillo salsa.

In addition to its eateries in Austin, Houston, Dallas, Chicago and Philadelphia, Snap Kitchen also has locations inside select Whole Foods supermarkets.
