Bacon is no longer something to be served as a breakfast meat or on a BLT. Today, bacon and bacon flavors are beginning to appear in everything from cocktails to popcorn to lip balm.

Bacon flavor also is expanding into baking — think maple bacon bars — and increasingly it is showing up in the confectionery category, with products such as chocolate covered bacon as well as bacon flavors in cakes, cookies and ice cream.


And it seems like every week retailers and foodservice operators launch a new bacon product in an effort to offer consumers more variety, while differentiating themselves from competitors. There’s no dearth of bacon cheeseburgers, club sandwiches, breakfast sandwiches, pizza, appetizers, soups, salads and even desserts that include bacon.
