Pork 101 coming to IPPE

Attendees will get a preview of the three-day class. 
 

WASHINGTON – At the 2017 International Production and Processing Expo (IPPE), Jan. 31 to Feb. 2, 2017, at the Georgia World Congress Center in Atlanta, Georgia, the North American Meat Institute (NAMI) and the American Meat Science Association (AMSA) will jointly host the Pork 101 educational workshop. A four-hour, hands-on session will offer attendees a sneak peek of what is included during the three-day, Pork 101 workshop AMSA regularly schedules each year.

Davey Griffin, Ph.D., professor and extension meat scientist at Texas A&M Univ., and Dean Pringle, Ph.D., associate professor and undergraduate coordinator at the Univ. of Georgia, will address quality and consistency and provide insight on value differences in swine, carcasses, primals and processed pork products.

The workshop will be held from 1:00 to 5:00 p.m. on Monday, Jan. 30 and is free to all registered IPPE attendees.
