FPSA announces 2015 Process Expo University Meat Program

MCLEAN, Va. – A slate of meat sessions that are scheduled to be a part of the Process Expo University educational program taking place Sept. 15-18 at Chicago’s McCormick Place was announced on Jan.27 by the Food Processing Suppliers Association (FPSA).

FPSA relayed these sessions will take place on the Process Expo show floor throughout the four-day event and admission is free for all registered attendees.

Process Expo University’s meat track will feature speakers from Iowa State Univ., Ohio State Univ., Texas A&M Univ. and the Univ. of Wisconsin. Topics include:

• Reducing Sodium in Meat Products
• Processing Interventions to Inhibit Listeria in RTE Meat products
• Sensory Analyses and QC of Processed Foods
• Different Types of Audits and How to Prepare
• Manufacture of Fresh Sausage
• Determining Product Shelf Stability and Shelf-Life in Meat Products
• Spoilage of RTE Processed Meats and Tips for Solving Problems

“We’re excited about this program because we know it responds to many of the concerns that our customers have in their businesses,” said Gil Williams, FPSA chairman and president of Poly-clip System USA. “These speakers come from the top university meat-science programs in the country and provide a powerful value-add to Process Expo. Not only do attendees get to meet with the industry’s top experts in equipment on the show floor, the sessions in Process Expo University also put them in front of some of the nation’s most distinguished academic experts discussing topics that will be of great benefit in their operations.”

“The last Process Expo University was a resounding success with average attendance per session more than doubling over sessions from the previous show,” said David Seckman, FPSA president and CEO. “We expect even stronger results this year as we have added speakers from six universities including those from Canada and Mexico, reflecting Process Expo’s diverse audience. These speakers will address critical processing and packaging issues across all segments of the food and beverage industry and will take place on the show floor for the convenience of our customers.”
