Smithfield serves brunch at Baconfest Chicago

CHICAGO — During the last weekend of April, more than 100 of Chicago’s best chefs created and served innovative bacon dishes to thousands of passionate bacon lovers at Baconfest Chicago, and Chef Frank Dominguez was among them to represent Smithfield, Virginia-based Smithfield Foods.
Attendees at Chicago Baconfest sampled new bacon-centric dishes during the festival’s Sunday Brunch event. The new recipes developed by Dominguez included Bacon & Jack Tots with Cholula ketchup, Bacon-Wrapped Goat Cheese-Stuffed Dates and Coconut Bacon Macaroons.
“We’re thrilled to participate in this festival as a supporting sponsor of the Baconfest Chicago Sunday Brunch event alongside one of our great partners in the Chicago area, Jewel-Osco,” said Mike Merritt, Smithfield senior director of marketing. “Chicago has some of the best chefs in the country, and we all know that bacon makes everything better. It’s exciting for us to participate in an event that unites fellow bacon lovers in celebration of our favorite meat candy.”
